Chef and restaurateur Tarul Sibal’s latest project in Bengaluru, Swing Gourmet Table and Wine Bar, helmed by food entrepreneur Akshay Luthria and Sibal. The project took several years to come to fruition, but after obtaining all the necessary licenses, it is finally open.
Along with Goa’s restaurant-bar Titli and Barfly and New Delhi’s KHI-KHI, Swing joins Sibal’s creative endeavors. “For me as an artist, I don’t like repeating myself. An entrepreneur would start this year and say I’m going to keep doing what I’m doing,” he told ET Hospitality World in a freewheeling interview. He spoke and added: What I do is an artist dreams and an entrepreneur executes it, and I’m able to balance both. ”
With such a diverse range of brands, Sibal said it’s very important to know people and what they expect from him when it comes to swinging. Street Storyss is a completely different brand with the pulse of the masses and of course 5 years of experience in the Bangalore market.
“Personally, I feel that Bangalore today is the most accommodating market for food and beverage entrepreneurs. And consumers here are more tolerant because going out is a more relaxing experience. . He’s calm about a lot of things. So even on the not-so-good days, it’s okay,” Sibal said of his business in Bengaluru compared to Goa and Delhi.
Having launched three new products in 2023, he felt that this was the year his entrepreneurial side began to emerge. He said 2024-25 will be about consolidating existing operations and opening more units of established brands.
“Swing has a lot of my instincts. It has a lot of memories of my travels down the coastline of India and the fact that I was stationed in Goa for a long time. Sri Lanka also participated a lot, and Thailand as well. There is Japanese influence, of course, but also Myanmar and Cambodian influence, but I have never eaten the typical dishes from there. I just realized what it meant to them,” he said of the new baby.
The next option is to expand the Titli and Barfly brands, Sibal said.
“If it were up to me, I’d take KHI KHI to London’s Mayfair. From Titli to Dubai or Bali. “I could go to a bar in Hyderabad for a barfly and then swing to Chennai or Hyderabad,” he adds. Ta. “With Street Stories, you can go anywhere from Indore to Bhopal to Delhi to Lucknow because it’s vegetarian.”
