Fly Creek is buzzing with new businesses.

Business partners Konstantin Gabaras and Bart Bahr launched The Buzz, a craft cocktail and tapas bar, at 6208 State Route 28 in Fly Creek in late October.

Constantine’s wife, Alexandra Gabaras, said both men bring decades of hospitality experience to the effort.

“My husband owned a restaurant and Bart ran a bar,” she said. “So they have experience in the field and Bart Barr’s family has been here for generations. Especially in the Cooperstown area, not Fly Creek. We saw a business opportunity to buy this building. I fell in love with this area completely.

“We’re New Yorkers, so we usually spend time in Windham and around the city, and that’s how we met Burt,” Gabaras continued. “We bought into his dream of opening a place for local people, and that’s what he called it. So this place is designed to be a local place. Summer. It wasn’t designed to capture the hustle and bustle of the city, but we want it to be open year-round.”

Although it took until mid-November to obtain the liquor license, Gabaras said patrons have been raving about the food and beverage offerings at The Buzz.

“When it comes to drinks, we have a very experienced mix master and local bartender who make their own syrups and extracts and have come up with many custom cocktails for us and our patrons, as well as modifying some older cocktails. ” she said. She also tells The Buzz that she also serves “really delicious” mocktails. “His Old Smokey, which you put on a cloth and lift it to the table and a little bit of wood smoke fills the air, was very popular during this cold season. We used to offer a tapas menu, but recently we have added main dishes. Crab cakes are the most popular. It is a part of tapas, but there is a lot of delicious crab meat in it. That was amazing because some people drove an hour to come twice. It’s delicious and one of our most popular (foods). We plan to (change the menu seasonally). But we’re just trying to figure out what the neighbors want.”

Despite the name, Gabaras said she hopes the space will inspire a slower pace.

“If you’re not that hungry, we think of it as a place where you can sit down and order a glass of wine and a small plate,” she says. “Some people sit at the bar and order a plate of olives and munch on the olives while drinking wine. We don’t expect to turn the tables right away. What we want to see is that people… It’s about having fun and not rushing.”

Gabaras said customers appreciate that approach.

“They were very encouraging and welcoming and came to give me advice,” she said. “I’m surprised that we were able to get local people (so quickly). We had people walking in, but we didn’t expect people to just walk in, so we had this I’m surprised the rumor spread so quickly.

“So much has happened,” Gabaras continued. “It’s older people and maybe retired people, but there’s also younger people who are coming on a date night. And at really late hours, around 9:30, there’s a lot of local people and local business owners.” They’re coming. So we’re just starting to see customers and people coming back.”

And Gabaras said it makes sense to restore some livelihood while preserving the 1850s building. She said The Buzz is hosting local bands, but is “still working on finalizing the schedule and seeing what people like,” adding that catering and brunch options are also being added. He said that there is a possibility that

Its history was retail, and there was also an association upstairs. And when you see pictures of people hanging out, You think about how social you were back then.” It’s so much fun to go to the store and then bring it back to the neighborhood. ”

The Buzz is open Wednesday through Saturday from 5pm to 10pm.
